Inspired by a winemaking style David Lucas discovered in Northern Italy, this Late Harvest Zinfandel is made by hand-harvesting grape clusters and sun-drying them on the vine—thanks to perfect 2020 fall weather. The grapes slowly concentrated their sugars on the vine, reaching between 32% and 40% sugar content, much higher than typical harvests.
The fermentation is slow and patient, lasting several months, stopping naturally when yeast can no longer convert the sugars, resulting in a rich, unfortified dessert wine. Flavors are intense and concentrated with notes of dried cherry, honey, and spices.
Pairs exquisitely with dark chocolate desserts, blue cheese, or enjoyed alone by a cozy fire.
